Ingredients
- 1 glass of shadowmorelle
- 2 tbsp Cornstarch
- 200 g whipping cream
- 125 g butter
- 1 tbsp Raw cane sugar
- a pinch salt
- 4 eggs
- 250 g whole wheat flour
- 250 ml milk (1.5% fat)
- 2 tsp Rapeseed Oil
- 2 tbsp powdered sugar from raw cane sugar

For the cherry compote, put the shadowmorelle with juice in a pot, take 3 tbsp of juice away, heat the rest with the fruit. Stir the juice with starch until smooth and add to the hot mixture while stirring; bring to a boil once and keep warm. Whip the cream stiff.

Creamily mix butter, sugar and salt. Separate eggs; gradually add yolks to the butter mixture and continue mixing until a fluffy airy mass forms. Sift flour and alternately stir in milk. Beat egg whites stiffly and gently fold into the batter.
