Waffles with Berries and Whipped Cream

Ingredients

  • 250 g flour
  • 0.5 cube yeast (21 g)
  • 50 g sugar
  • 375 ml lukewarm milk
  • 80 g Butter
  • 3 eggs
  • 200 ml whipping cream
  • 2 tbsp powdered sugar
  • 300 g mixed berries (e.g., blackberries, raspberries, currants, blueberries)
  • 150 ml red currant juice
  • 1 packet vanilla sugar
  • 1 tsp Cornstarch

Instructions

    Sift the flour into a bowl, make a well in the center, crumble in the yeast, add 1 tbsp sugar and 4 tbsp lukewarm milk to form a smooth pre‑mix and cover for about 15 minutes. Melt the butter in the remaining milk and combine with the eggs and remaining sugar, then mix with the pre‑mix using the dough hooks of an electric hand mixer until thick; let rise for another 20 minutes.

    Preheat the waffle iron and lightly oil it. Pour 1–2 tbsp batter into the iron and bake waffles to a golden brown.

    Beat the cream with powdered sugar until stiff peaks form.

    Wash, rinse, and clean the berries. In a saucepan bring the juice and vanilla sugar to a boil, thicken with cold water‑mixed cornstarch, add the fruit, and let cool.

    Spread whipped cream on the waffles, stack two on top of each other, and serve topped with the berry compote.
