Waffles with Apple Cream Filling

Ingredients
- 4 eggs
- Salt
- 125 g butter
- 80 g sugar
- 200 g Flour
- 50 g cornstarch
- 250 ml milk
- fat (for the waffle iron)
- 200 g cream cheese (pure)
- 6 tbsp apple sauce
- 2 tbsp lemon juice
- 3 tbsp honey
- 1.5 tbsp matcha tea powder
- 200 ml whipping cream
- mint (for garnish)

Separate the eggs and beat the whites with a pinch of salt until stiff.

Cream the butter with sugar, then gradually fold in the yolks. Mix flour with cornstarch and stir into the butter mixture with milk. Finally fold in the beaten egg whites.

Preheat the waffle iron, lightly grease it, and pour 3-4 tbsp of batter into each section. Bake golden waffles sequentially and let them cool.

Mix cream cheese with apple sauce, lemon juice, honey, and matcha; whip the cream until stiff and fold in gradually. Fill a piping bag with a star tip, pipe onto half the waffles, cover with another waffle, halve, and serve garnished with mint.
