Oatmeal Chocolate Cookies

Ingredients
- 125 g butter
- 150 g oat flakes (whole)
- 125 g flour
- 1 tsp Baking powder
- 2 tbsp cocoa powder
- 125 g cornstarch
- 175 g sugar
- 2 tbsp vanilla sugar
- a pinch salt
- 0.5 tsp cinnamon powder
- 1 tsp grated lemon zest (unprocessed)
- 2 Eggs
- milk as needed
- 75 g chopped hazelnuts
- grated chocolate for decoration

Preheat the oven to 180°C fan.

In a small pot, foam the butter. Pour the hot butter over the oat flakes in a bowl and mix. Sift together flour, baking powder, and cocoa; add to the mixture. Stir in cornstarch, sugar, vanilla sugar, salt, cinnamon, and lemon zest, then combine with eggs and milk into a not too firm, workable dough. Fold in hazelnuts, scoop walnut-sized portions onto parchment-lined tray spaced apart.

Bake in the preheated oven for about 20 minutes. Remove and cool on a wire rack.

Sprinkle grated chocolate for decoration.
