Hazelnut Chocolate Cookies

Ingredients

  • 200 g Flour
  • 100 g powdered sugar
  • 200 g ground hazelnuts (or almonds)
  • 1 tsp cinnamon
  • a pinch of salt
  • 200 g butter
  • 20 ml rum
  • 1 egg (beaten)
  • flour (for dusting the work surface)
  • 1 Egg white
  • 75 g coarsely chopped hazelnuts (peeled, or almonds)
  • 150 g dark chocolate couverture (at least 60% cocoa)

Instructions

    Mix flour, powdered sugar, nuts, cinnamon and salt; place on a work surface and make a well. Add butter pieces, pour rum and beaten egg into the well, crumble everything with a dough scraper and quickly knead by hand into a shortcrust dough. Wrap in foil and chill for 45 minutes.

    Roll out the dough to 1 cm thickness on a lightly floured surface and cut circles (4-5 cm diameter). Place side by side on a parchment-lined tray, brush with egg white and sprinkle with chopped nuts. Bake in a preheated oven (middle rack) for about 12–15 minutes. Remove and cool on a wire rack. Melt the couverture over a double boiler and brush the cookie bottoms—and optionally the edges—with it. Place on foil and let dry fully.
