Chocolate Cookies

Ingredients

  • 100 g dark chocolate
  • 0.5 Vanilla pod
  • 50 g softened butter
  • 50 g whole cane sugar
  • 1 egg
  • 160 g spelt flour type 1050
  • 2 tbsp cocoa powder
  • 1 tsp Baking powder
  • a pinch of salt
  • 5 tbsp Milk (3.5% fat)
  • powdered sugar (from erythritol; for dusting)

Instructions

    Chop the dark chocolate into small pieces. In a saucepan, heat water and melt the chocolate in a container over the bain‑marie.

    Split the vanilla pod lengthwise and scrape out the seeds. Beat the butter with whole cane sugar until fluffy. Add the egg, vanilla seeds, and melted chocolate. Sift spelt flour, cocoa powder, baking powder, and salt over the mixture and stir briefly with milk. Cover and refrigerate for about 1 hour.

    Take small portions of dough, shape into balls, and place them on a baking sheet with space between each. Bake in a preheated oven at 180°C (160°C fan; gas: level 2–3) for 10–15 minutes. Remove, cool, dust with powdered sugar, and serve.
