Waffle Ice Cream Dessert

Ingredients
- 200 g Blueberries
- 100 g white chocolate
- 0.5 Vanilla bean
- 200 ml milk
- 150 ml whipping cream
- 4 fresh egg yolks
- 60 g sugar
- 50 g dark chocolate shavings
- 5 Belgian butter waffles
- 4 tbsp Maple syrup
- blueberries (for garnish)
Instructions

Rinse the blueberries and pat them dry.

Chop the white chocolate and melt it over a hot water bath. Split the vanilla bean lengthwise. Whisk the milk, sugar, and egg yolks over another hot water bath until creamy. Remove from heat, fold in the melted chocolate, and chill (possibly in an ice bath). Discard the vanilla bean. Beat the cream stiffly and fold in the chocolate shavings and blueberries into the mixture.

Line a rectangular pan about 20x15 cm with cling film. Spoon some of the ice cream mixture into it. Cut the waffles into rectangles and cover them with the ice cream. Alternate layers of ice cream and waffles to make four layers.

Freeze the waffle ice cream for at least 5 hours. Then remove from the pan and peel off the film. Dip a large knife in warm water and cut the layered dessert into four pieces. Serve drizzled with maple syrup and garnished with blueberries as desired.
