Ingredients
- 1 Shallot
- 1 tsp butter
- 100 ml Noilly Prat
- 1 tbsp green herb mustard
- 150 ml Vegetable broth
- 100 g heavy cream
- Salt
- Pepper (freshly ground)

Peel and finely chop the shallot; sauté in hot butter in a pot until translucent. Add Noilly Prat, reduce by half over medium heat.

Strain the sauce through a sieve into a pot, stir in mustard. Pour in vegetable broth and heavy cream, bring to a boil and reduce by about one-third. Season with salt and pepper, taste.
