Vegi Burger with Bean Patty

- 400 g kidney beans (canned)
- 120 g breadcrumbs
- 1 Red Onion
- 1 pinch ground cumin
- Salt
- Pepper
- chili powder
- 1 tomato
- 0.5 iceberg lettuce
- 5 Tbsp plant oil
- 4 buns
- 4 eggs

Rinse the beans in a sieve and drain well. In a food processor, pulse with breadcrumbs and about 75 ml lukewarm water until finely chopped, then transfer to a bowl. Peel and finely chop the onion. Add cumin, salt, pepper, and chili powder to the bean mixture and stir thoroughly. Cover and let rest for about 30 minutes.

Meanwhile, wash the tomato, remove the stem, and slice into four rounds. Wash the lettuce, dry, and cut into strips.

Preheat the oven on the grill setting.

The patty mixture should now be firm; add a little more water or breadcrumbs if needed. With damp hands, form four patties and fry in 3-4 tbsp hot oil in a pan for 3-4 minutes per side until golden brown.

Halve the buns cut-side up and toast under the grill. Fry the eggs in a pan with the remaining oil to make four sunny‑side‑up eggs, seasoning lightly.

Assemble the burgers with bun, lettuce, tomato, bean patty, and egg, then serve immediately.
