Ingredients
- 4 sole fillets (100 g each)
- 2 tbsp lemon juice
- handful of young baby spinach leaves
- 4 small sesame buns
- 2 tbsp Vegetable oil
- 1 tsp butter
- Salt
- white pepper (ground)
- flour (for dredging)
- 3 tbsp mayonnaise

Wash the sole fillets, pat dry and drizzle with lemon juice. Rinse the spinach, wash and spin dry. Cut the buns in half and toast them. Heat the oil and butter in a pan. Pat the fish dry, season with salt and pepper, dredge in flour, and fry each side for 3-4 minutes until golden brown.

Spread a thin layer of mayonnaise on the bottom bun halves and top with several spinach leaves. Place one fillet on each, add a bit more mayo, cover with remaining spinach, place the top buns, and serve immediately.
