- 4 pears
- 40 ml pear brandy
- 1 untreated lemon
- 2 cloves of mace
- 2 tbsp honey
- 1 Vanilla bean
- 200 g mascarpone
- 1 tsp vanilla essence
- 2 tbsp honey
- 100 ml whipping cream
- 1 tsp freshly chopped lemon balm
- 1 handful blueberries
- Lemon balm (for garnish)

Wash the pears, quarter them, remove the core and cut the fruit into slices. Pour 250 ml water with the pear brandy into a pot. Peel the lemon rind and squeeze out the juice; add both to the pot along with the mace, honey, and split vanilla bean. Bring to a boil, then add the pears and remove from heat. Let cool gently while stirring occasionally.

For the cream, whisk mascarpone with vanilla essence and honey. Fold in stiffly whipped cream and lemon balm. Arrange pears on plates together with the cream, garnish with lemon balm and blueberries, and serve.
