Ingredients
- 0.5 l milk
- 0.25 L whipping cream
- 1 Vanilla bean
- 7 egg yolks
- 200 g sugar
- 200 g mixed candied fruit (chopped to taste)
- 6 tbsp chopped pistachios

Pour the cream and milk into a pot. Split the vanilla bean lengthwise, scrape out the seeds, and stir both the seeds and the pod into the cream-milk mixture; bring to a boil.

Beat the egg yolks with the sugar in a bowl until creamy.

Whisk the boiling milk into the egg yolk mixture, then pour everything back into the pot. Remove the vanilla pod and cook over low heat, stirring with a wooden spoon until the custard thickens—never let it boil.

Strain the vanilla custard through a sieve, cool it in an ice bath while stirring occasionally, and fold in the candied fruit.

Pour the chilled custard into an ice cream maker and churn to finish. (If you don’t have an ice cream maker, pour into a shallow metal bowl and freeze, stirring vigorously every hour during the first hour to prevent large crystals).
