Vegetarian Tortellini Salad

A vegetarian tortellini salad is the perfect after-work recipe – quick to make, healthy, and made with fresh ingredients.
Ingredients
- 300 g tortellini (e.g., cheese-filled from the refrigerated section)
- 0.5 cucumber
- 0.5 green bell pepper
- 2 carrots
- 3 tomatoes
- 4 tbsp plain yogurt
- 3 tbsp finely chopped parsley
- olive oil (cold-pressed)
- 2 tbsp lemon juice
- Salt
- freshly ground pepper

Seed the bell pepper and cut into thin strips. Clean the tomatoes, wash them, and cut off the stem end in a wedge shape before dicing into small cubes. Peel and slice the cucumber and carrots.

Cook the tortellini according to package instructions in plenty of boiling salted water, drain, and let cool slightly. Place in a bowl and mix with the vegetables, 3 tbsp olive oil, lemon juice, salt, and pepper. Drizzle the vegetarian tortellini salad with yogurt, sprinkle parsley on top, and serve.
