Cucumber Soup with Yogurt

Ingredients

  • 2 cucumbers
  • Salt
  • 0.5 bunch dill
  • 500 g plain yogurt
  • 250 ml vegetable broth
  • 50 ml olive oil
  • black pepper (freshly ground)
  • 1 splash Lemon juice
  • 1 Garlic clove

Instructions

    Peel the cucumbers, grate them into thin slices, spread them on a plate, sprinkle with 1 teaspoon of salt and let them rest for about 30 minutes.

    Meanwhile wash the dill, shake off excess water, finely chop the tips. Whisk the yogurt with vegetable broth, olive oil, and dill; season with salt, pepper, and lemon juice.

    Peel the garlic clove, press it into a small bowl, taste again, and mix with the cucumber slices. Arrange in serving bowls and serve.
