Ingredients

  • 1.5 cucumbers
  • 6 Radishes
  • 1 handful mint
  • 2 Garlic cloves
  • 200 ml cold vegetable broth
  • 600 g yogurt
  • Salt
  • black pepper (freshly ground)
  • mint for garnish

Instructions

    Wash, peel, halve the cucumber, scrape out the seeds and cut into small cubes. Wash and trim the radishes; cut three into coarse cubes and dice the rest finely. Rinse the mint and let it drain on kitchen paper.

    Peel the garlic and blend with the cucumber cubes, radishes, mint, and broth until smooth. Stir in the yogurt and season with salt and pepper to taste.

    Refrigerate for at least 30 minutes. Blend again briefly, pour into chilled glasses, and garnish with finely diced radishes and mint before serving.
