Vegetarian Pizza with Pistou

Ingredients

  • 0.5 cube yeast (21 g)
  • 400 g flour
  • 1 tbsp salt
  • 4 tbsp olive oil
  • flour for dusting the work surface
  • 8 garlic cloves
  • a handful basil
  • 2 tbsp pine nuts
  • 4 tbsp olive oil
  • 400 g tomatoes (red, green and yellow)
  • 150 g canned corn
  • 100 g feta cheese
  • Salt
  • black pepper from the mill

Instructions

    Dissolve the yeast in 200 ml lukewarm water for the dough. Mix the flour with the salt, put it in a bowl, press a well in the center and pour in the yeast mixture and oil. Knead into a smooth dough by hand or with the beaters of an electric hand mixer. If the dough is too dry add a little more lukewarm water; if it’s too wet add a bit more flour. Knead vigorously on a floured surface and cover, letting rise in a warm place for about 1 hour.

    Preheat the oven to 180 °C (356 °F) with both fan and top heating. Line a baking tray with parchment paper. Place the unpeeled garlic cloves on it and bake for about 10 minutes until soft. Let cool, then squeeze out the softened garlic from its skins. Blend the squeezed basil leaves, pine nuts and olive oil into a fine paste.

    Wash the tomatoes, cut off the stems and slice them. Drain the corn well.

    Knead the dough again, roll it out and place on the baking tray. Spread 2/3 of the pistou over it, leaving a 3–4 cm border. Distribute the corn on top and crumble feta cheese over it. Arrange tomato slices and season with salt and pepper. Drizzle the remaining pistou and fold the edge slightly over the toppings.

    Bake in the oven for about 30 minutes until golden brown.
