Vegetarian French Onion Soup

- 100 g grated mature mountain cheese (vegetarian)

Peel the onions and slice them into thin rings. Heat the oil in a pot and sauté the onions for about 10-15 minutes until soft. Season with sugar, salt, and pepper, then simmer for another 10 minutes, stirring occasionally, until they turn light brown.

Add the broth, bring to a boil, and let it simmer for an additional 10 minutes. Peel the garlic and press it into the soup, seasoning with lemon juice, salt, and pepper.
