Original French Onion Soup
Original French onion soup from Spoonsparrow: The aromatic soup is gratinated with Gruyère and tastes wonderfully hearty!
Ingredients
- 600 g onions
- 2 tbsp olive oil
- 3 tsp sugar
- Salt
- black pepper (freshly ground)
- 125 ml white wine
- 1 l beef broth
- 0.25 tsp thyme
- 2 Garlic cloves
- 1 tsp lemon juice
- 8 slices baguette
- 100 g grated Gruyère cheese

Preheat the oven to 220°C.

Peel and slice the onions into thin rings. Heat the oil in a pot and sauté the onions for about 10-15 minutes until soft. Season with sugar, salt, and pepper, then simmer for another 10 minutes, stirring occasionally, until they turn light brown.

Add white wine and broth, season with thyme, bring to a boil, and let it simmer for an additional 10 minutes. Peel the garlic cloves and press them into the soup, then season with lemon juice, salt, and pepper.

Divide the soup among four oven-safe bowls. Place two slices of baguette on top of each bowl and sprinkle the Gruyère cheese over them. Bake in the preheated oven for 5-10 minutes until the cheese melts, then serve immediately.
