Onion Soup with White Wine

The onion soup with white wine from Spoonsparrow is inspired by the French classic and perfect for guests.
Ingredients
- 1 kg onions
- 50 g butter
- 1 l vegetable broth
- 250 ml dry white wine
- nutmeg
- Thyme (1 tsp fresh or ½ tsp dried)
- a pinch ground cumin
- 50 g raclette cheese (grated)
- 1 bunch parsley
- 4 slices baguette
- 2 Garlic cloves
- Salt
- Pepper (freshly ground)
Instructions

Peel the onions and slice them into thin strips. In a pot, melt the butter and sauté the onions until translucent.

Add the broth and wine, then stir in nutmeg, thyme, and cumin. Let the soup simmer for 25-30 minutes.

Toast the baguette slices and rub them with a peeled garlic clove. Squeeze the garlic into the soup and mix well.

Season the soup with salt and pepper, then ladle it into heat‑proof bowls.

Top each bowl with a toasted baguette slice, sprinkle grated cheese over it, and place under the grill for about 5 minutes until the cheese melts. Enjoy the onion soup with white wine.
