Vegetarian Burger
Try the delicious vegetarian burger from Spoonsparrow!
Ingredients
- 125 ml milk
- 100 g oats
- 1 tsp salt
- 1 tsp curry powder
- 30 g flour
- 4 tbsp rapeseed oil
- 1 tbsp Pumpkin seeds
- 2 small carrots
- 2 tbsp quark
- 150 g mixed salad (e.g., radicchio, endives, frisée)
- 1 Mini Cucumber
- 6 tbsp yogurt
- 2 tbsp sharp mustard
- 1 tbsp honey
- 1 tsp lemon juice
- Salt
- 4 burger buns

Heat the milk for the patties and add 75 g oats with salt, curry, flour, and 1 tbsp oil. Mix well, remove from heat, and let sit for about 30 minutes to absorb.

Meanwhile, wash the salad thoroughly, dry it, and tear into small pieces. Wash the cucumber, trim ends, and slice lengthwise. Whisk yogurt with mustard, honey, lemon juice, and a pinch of salt. Taste and set aside.

For the patties, finely chop pumpkin seeds. Peel and grate carrots. Mix both with quark. Add to the oat mixture and combine well. With damp hands shape four patties and coat them in remaining oats. Fry in hot oil in a pan for 3‑4 minutes on each side until golden brown.

Halve the burger buns, add some salad on top, drizzle with 1 tbsp sauce, place patty, then add remaining salad and cucumber slices. Drizzle remaining yogurt sauce over everything and close with the bun top. Serve secured with a skewer.
