Salmon Burger

Ingredients
- 4 hamburger buns
- 700 g salmon fillet (skinless)
- 2 tsp lemon juice
- 2 tbsp quark
- 1 egg
- 6 tbsp breadcrumbs
- Salt

- 200 g yogurt
- 2 tbsp chopped dill
- 2 tbsp lemon juice

- lemon wedges
- dill sprigs

Remove any remaining fish bones with tweezers, then cut the salmon into small pieces. Peel and dice the shallot; combine it with the salmon, lemon juice, quark, egg, and 3 tbsp breadcrumbs in a blender and pulse briefly. Season with salt and pepper.

Shape the salmon mixture into four patties and coat them in remaining breadcrumbs. Fry each side golden brown in hot oil in a skillet.

Mix yogurt with dill and lemon juice; season with salt and pepper to taste.

Split or cut the hamburger buns. Assemble the burgers by placing lettuce and one salmon patty on each bun. Spoon the yogurt dip over the patties and garnish with dill sprigs. Add lemon wedges to the plate for extra flair.
