The vegan lentil burger from Spoonsparrow is a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients

  • 250 g red lentils
  • 1 Garlic clove
  • 1 small red bell pepper
  • 3 tbsp soy flour
  • 80 g rolled oats
  • Salt
  • Pepper
  • 0.5 tsp turmeric
  • 0.5 tsp cumin
  • 2 tbsp Rapeseed oil
  • 4 spelt whole wheat buns
  • 80 g vegan cream cheese alternative
  • handful chopped mixed herbs
  • 4 leaves frisée lettuce
  • handful lamb's lettuce
  • 1 tomato

Instructions

    Cook the lentils for about 15 minutes until soft, then drain. While they cook, peel and finely chop the garlic. Wash, deseed, and dice the bell pepper as finely as possible. Blend half of the lentils into a puree and mix with the garlic, bell pepper, soy flour, 3 tbsp water, and rolled oats. Add the remaining lentils and season the mixture generously with salt, pepper, turmeric, and cumin.

    Shape the mixture into patties. Heat oil in a pan and cook the patties for about 4 minutes on each side.

    Halve the buns. Mix the vegan cream cheese with the chopped herbs and spread this mixture on the top halves of the buns. Wash and dry the lettuce leaves. Slice the tomato.

    Layer the lettuce leaves on the bottom bun halves, place the patty on top, add tomato slices and lamb's lettuce, then close with the top bun and serve.
