Vegetable Tofu Burger

Ingredients

  • 2 tbsp olive oil
  • 200 g smoked tofu
  • 4 tbsp soy sauce
  • 2 tbsp Tabasco
  • 1 tbsp ketchup
  • 1 Carrot
  • 1 stalk of green onion (only the green part)
  • 1 white onion
  • 0.5 bunch Parsley
  • 1 Parsnip
  • 4 tbsp fine peanut butter (jar)
  • 4 tbsp chopped salted peanuts
  • 4 tbsp vegetable broth
  • Salt
  • freshly ground pepper

Instructions

    Slice the tofu into 4 thin pieces. Mix soy sauce, Tabasco and ketchup; brush the tofu with this mixture and marinate for at least 1 hour.

    Peel and roughly chop the onion. Sauté in butter until translucent. Sprinkle curry powder over it, add peanuts and toast briefly, then pour in peanut cream and vegetable broth; stir to a creamy‑firm sauce. Season and let cool.

    Wash, dry shake and roughly chop parsley. Peel carrot and parsnip and cut into very thin julienne strips. Clean green onion, wash and slice lengthwise into fine julienned strips. Toast burger buns until golden brown in a toaster or under the oven grill. Pat tofu slices dry and fry them in oil in a non‑stick pan on both sides until golden; keep covered and warm. Blanch all vegetable strips in boiling salted water: carrots and parsnip for about 3 minutes, green onion for 1 minute. Remove, drain. Place one tofu slice on each half of a bun, sprinkle with vegetable strips and parsley, drizzle peanut sauce, top with the other bun half, and serve immediately.
