Tofu Polenta Burger

Ingredients
- 4 whole grain buns
- 400 g tofu (cut into 4 equal slices)
- 4 Cherry Tomatoes
- 0.5 cucumber
- 4 leaves of Lollo biondo lettuce
- 1 tbsp whole wheat flour
- 2 Tbsp corn grits
- 2 tbsp Whole wheat breadcrumbs
- 1 tbsp chopped parsley
- Salt
- Pepper
- 2 tbsp oil
- 2 tbsp ketchup

Halve the buns. Drain and pat dry the tofu. Wash the tomatoes, remove stems, and slice them. Slice the cucumber very thinly. Clean, wash, and pat dry the lettuce leaves.

Whisk flour with 3–4 Tbsp water. Mix corn grits with breadcrumbs and parsley. Season tofu with salt and pepper, coat in the flour mixture, then dredge in the grits-breadcrumb-herb mix. Heat oil in a hot pan and fry patties for 4–5 minutes until golden brown.

Top the bottom bun half with tomatoes, cucumber, and lettuce, place the tofu patty on top, cover with the other bun half, and serve with ketchup.
