Tofu Burger

Ingredients
- 4 slices of tofu (about 80 g each)
- 1 tsp soy sauce
- Pepper
- 2 tbsp flour
- 6 tbsp soy drink (soy milk)
- 60 g white bread crumbs
- 3 tbsp vegetable oil
- 1 tomato
- 1 small onion
- 4 lettuce leaves (e.g., red oak leaf)
- 150 g cucumber salad
- 4 whole‑grain buns
- 80 g vegan remoulade
- 4 tbsp garden cress

Rinse the tofu and pat it dry. Drizzle with soy sauce and season with pepper. Whisk a thin batter from flour and soy milk, then coat the tofu slices in it. Dredge them in bread crumbs. Fry in hot oil in a hot pan for 2–3 minutes on each side until golden brown.

Wash the tomato, cut off the stem end, and slice it. Peel the onion and cut it into thin rings. Rinse the lettuce, shake dry, and clean it. Peel the cucumber and slice it.

Halve the buns horizontally and spread a little remoulade on them. Layer with lettuce, cucumber, tomato, onion, and the fried tofu slices, then add more remoulade on top. Garnish with cress, place the bun tops back on, and serve.
