Tofu Corn Burger

Ingredients
- 200 g corn (canned; drained weight)
- 200 g natural tofu
- 200 g smoked tofu
- 1 onion
- 1 Garlic clove
- 3 sprigs parsley
- 1 tbsp Rapeseed Oil
- 1 red chili pepper
- Salt
- Pepper
- 8 Lollo Bianco lettuce leaves
- 2 ripe tomatoes
- 1 large red onion
- 4 sesame seed burger buns
- 4 tsp salad cream
- 4 tsp medium-hot mustard
- 4 tsp ketchup
Instructions

Drain the corn in a sieve and roughly chop. Finely chop the tofu. Peel and finely chop the onion and garlic. Wash the parsley, shake dry, pluck the leaves and chop.

Heat 1 tsp oil in a pan and sauté the onion and garlic until translucent. Wash the chili pepper, halve it lengthwise, deseed, finely chop and mix with the parsley. Remove from heat and let cool.

Mix tofu with the onion mixture, corn, salt and pepper and knead. Shape the mixture into four equal patties. Heat remaining oil in a pan and fry the patties on both sides until golden brown.

Wash, clean and dry the lettuce leaves; cut them into strips. Wash the tomatoes, remove stems, slice into thin wedges. Peel the red onion and slice into fine rings.

Toast the burger buns according to package instructions.

Spread salad cream and mustard on the bottom halves of the buns, top with a lettuce leaf and some onion rings. Place one patty on each, cover with onion rings, tomato slices and another lettuce leaf. Spread ketchup on the bun tops and place them over the patties.
