Ingredients

  • 200 g carrots
  • 200 g sweet potatoes
  • 200 g Cherry tomatoes
  • 200 g zucchini
  • 150 g beetroot
  • 150 g onions
  • 2 Garlic cloves
  • Salt
  • 1.5 tbsp paprika powder
  • 1 tsp ground cumin
  • 0.5 tsp Ras el-Hanout
  • 0.5 tsp Black pepper
  • 4 tbsp olive oil
  • 150 ml Vegetable broth
  • coriander leaves (for garnish)

Instructions

    Peel the carrots and sweet potatoes and cut them into bite‑sized, rough pieces.

    Wash the tomatoes and halve them as desired. Wash, trim, and cut the zucchini into bite‑sized pieces. Peel the onions and beetroot and slice them into thin strips.

    Separate the garlic cloves, finely chop them, and mix with the spices and 4 tbsp oil.

    Toss the vegetables (except the tomatoes) in the spiced oil and brown them in a tajine or heavy pot. Add the broth, cover, and simmer over medium heat for 20 minutes. Then add the tomatoes and simmer for another 5–10 minutes. Taste, sprinkle with coriander leaves, and serve.
