Stuffed Bell Peppers

Ingredients

  • 15 yellow bell pepper halves
  • 500 g ground beef
  • 200 g Feta Cheese
  • 2 tbsp pine nuts
  • 1 tbsp finely chopped oregano
  • 2 shallots
  • 2 Garlic cloves
  • olive oil
  • 2 Eggs
  • Salt
  • ground pepper

Instructions

    Wash the peppers and slice them lengthwise on one side, removing the seeds.

    Peel and finely chop the shallots and garlic. Sauté in 2 tbsp hot olive oil. Remove from heat and mix with ground beef, pine nuts, and eggs. Add cubed feta and season with salt and pepper. Fill the pepper halves and place in a baking dish. Drizzle the stuffed peppers with olive oil and bake in a preheated oven at 180°C (350°F) for about 30 minutes.
