Vegetable Tagliatelle Salad

Ingredients

  • 200 g Tagliatelle
  • 200 g green tagliatelle
  • 1 Red Onion
  • 4 slices stale white bread
  • 4 tomatoes
  • 1 bunch parsley
  • juice of 1 lemon
  • 2 tbsp white wine vinegar
  • 6 tbsp Olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Cook the tagliatelle according to package instructions until al dente in plenty of salted water.

    Peel and slice the onion into thin strips.

  3. 3.

    Wash the tomatoes, remove stems, and dice them.

  4. 4.

    Finely chop the parsley, reserving a few leaves for garnish.

    Whisk together white wine vinegar, 4 tbsp olive oil, lemon juice, and 2 tbsp pasta cooking water to make a dressing. Season with salt and pepper.

    Cut the stale bread into cubes and fry in the remaining olive oil until golden brown to create croutons.

    Drain the noodles, rinse under cold water, and let them drain. Toss with onion, tomatoes, and dressing. Add parsley, adjust seasoning, and top with croutons before serving.
