Vegetable Stir-Fry with Seven Different Grains

Ingredients

  • Salad salt
  • 125 g core mix (rice, oats, barley, spelt, wild rice, wheat, rye in equal parts)
  • 100 g carrots
  • 1 thin stalk of leek
  • 100 g celery stalks
  • 250 g White cabbage
  • 2 tbsp oil
  • pepper (ground)
  • 125 ml Vegetable broth
  • nutmeg
  • 40 g Pecorino cheese
  • 0.5 bunch Parsley

    Bring 250 ml salted water to a boil, add the grain mix and simmer covered over low heat for 20 minutes. Meanwhile peel the carrots, clean and wash the leek, then julienne both. Trim, wash and thinly slice the celery stalks. Wash the cabbage, remove the core and cut into very fine strips. Heat oil in a large pan, sauté the vegetables for 3 minutes, season with salt and pepper.

    Pour in the broth and simmer covered over low heat for 10 minutes. Drain the grains and let them drain briefly, then add to the pan with the vegetables and stir until the liquid has evaporated. Season with salt, pepper and nutmeg. Grate the pecorino cheese. Wash, dry shake and chop the parsley leaves, then sprinkle the cheese and parsley over the vegetable stir-fry.
