Vegetable Stir-Fry with Beef

- 400 g beef (entrecote)
- 3 tbsp vegetable oil
- 200 green beans
- 2 carrots
- 2 red bell peppers
- 2 medium potatoes
- 40 ml dry sherry
- 2 tbsp Soy sauce
- 1 tbsp curry powder
- 1 tsp hoisin sauce
- 300 ml Vegetable broth
- 2 tsp cornstarch
- 1 small bean sprouts
- 1 tbsp Sesame seeds
- Salt
- pepper (ground)

Wash the beef, pat it dry and cut into thin strips. Wash the green beans, trim them and cut in half lengthwise. Peel the carrots and dice them into small pieces. Halve the bell peppers, remove seeds, wash and slice into fine strips. Peel the potatoes and dice into small pieces. Heat oil in a wide pan and sear the beef strips over high heat for 3-4 minutes; remove and keep warm.

Reduce heat slightly and stir-fry the vegetables, seasoning with sherry, soy sauce, salt, pepper, curry powder, and hoisin sauce. Add vegetable broth and simmer for 8-10 minutes. Mix cornstarch with a little cold water, pour into the pan, bring to a boil, then add the beef and bean sprouts. Sprinkle with sesame seeds before serving.
