Ingredients
- 4 tbsp peanut oil
- 250 g raw shrimp (deveined, peeled)
- 0.25 tsp Ginger powder
- 2 spring onions (chopped)
- 2 tsp starch
- 0.5 tsp Sugar
- 2 tbsp Soy sauce
- 1 large carrot (thinly sliced)
- 2 stalks celery (finely chopped)
- 150 g small mushrooms (cleaned)
- 250 g Lo Mein noodles (Chinese egg noodles) or thin spaghetti
- 0.5 tsp Salt
- 0.5 garlic clove (crushed)

Cook noodles according to package instructions, drain, reserve 1/2 cup of the cooking water and set aside.

In a large pan or wok, stir-fry carrots, spring onions, celery in oil over high heat with garlic briefly, add mushrooms and cook for another short while.

Add shrimp, stir-fry for one more minute. Mix starch into the reserved noodle water, then combine with soy sauce, sugar, salt, and ginger; stir well and let simmer briefly so vegetables stay crisp. Toss in noodles and reheat.
