Ingredients

  • 1 stalk leeks
  • 1 Zucchini
  • 1 clove garlic
  • 1 piece fresh ginger (about 2 cm)
  • 2 Tomatoes
  • 2 tbsp sesame oil
  • 400 g Tofu
  • 2 tbsp Soy sauce
  • black pepper (freshly ground)
  • Salt

Instructions

    Clean and wash the leeks, then slice into thin rings. Peel and dice the zucchini into small cubes.

    Peel and finely dice the garlic and ginger. Wash the tomatoes, quarter them, remove seeds, and cut into small cubes.

    Heat oil in a large pan or wok, then gently stir-fry the leeks, ginger, and garlic while stirring.

    Add crumbled tofu and cook for about 2 minutes. Add zucchini, soy sauce, and pepper; cook for another minute.

    Finally fold in tomatoes, season with salt, and serve over rice if desired.
