Vegetable Stew with Lentils for Thermomix®

Ingredients
- 200 g carrots (2 carrots)
- 250 g large kohlrabi (0.5 large kohlrabi)
- 2 Spring Onions
- 0.25 tsp rapeseed oil
- 20 g red lentils (2 tsp)
- 200 ml Mediterranean vegetable broth
- Salt
- Pepper
- 0.5 bunch Parsley
- 0.5 tbsp balsamic vinegar (add a little more if desired)
Instructions

Wash, dry, and shake off the leaves of the parsley; pick off the small pieces and put them in the mixing bowl. Pulse for 3 seconds on speed 8. Transfer to another container.

Wash, peel, and cube the carrots; wash and peel the kohlrabi as well; cube both and add to the mixing bowl.

Trim and wash the spring onions, cut into rings, and add to the vegetables in the mixing bowl. Add rapeseed oil, sauté for 5 minutes at 120 °C on reverse mode at speed 1.

Add 100 ml water and the lentils, cook for 15 minutes at 100 °C on reverse mode at speed 2. Then add the broth, season with salt and pepper, taste with vinegar, and sprinkle with parsley.
