Lentil Vegetable Soup

Ingredients
- 250 g split lentils
- 1 onion
- 2 Garlic cloves
- 1 tbsp Olive Oil
- 2 tsp Turmeric powder
- 100 ml apple juice
- 1.5 l vegetable broth
- Salt
- 1 bay leaf
- 400 g carrots (4 carrots)
- 140 g celery stalks (2 stalks)
- 0.5 organic lemon (zest and juice)
Instructions

Wash and drain the lentils. Peel and finely chop the onion and garlic.

Heat oil in a large pot. Sauté onions with garlic for 2–3 minutes over medium heat. Add turmeric and lentils, sauté for 2 more minutes. Pour in apple juice and vegetable broth, season with salt, add bay leaf, cover and simmer over medium heat for about 30 minutes.

Meanwhile, peel and slice the carrots into rounds. Clean the celery stalks, remove any tough ends if needed, wash and slice them.

After 30 minutes of cooking, add the carrots and celery and cook for another 15 minutes.

Add lemon zest and juice, taste and adjust seasoning. Serve the lentil vegetable soup in bowls while hot.
