Ingredients
- 300 g cauliflower
- 300 g broccoli
- carrots
- 1 kohlrabi
- 250 g white asparagus
- 100 g Sugar snap peas
- 1 bunch spring onions
- 1 tbsp oil
- 1 clear vegetable broth
- 20 g tofu
Instructions

Clean cauliflower and broccoli, cut into florets and rinse.

Peel carrots and kohlrabi and cut into pieces. Peel asparagus, trim ends and cut into pieces.

Rinse sugar snap peas, clean and cut as desired. Wash spring onions and finely chop.

Heat oil in a large pot. Sauté spring onions. Add broth and bring to boil. Add vegetables (except asparagus and sugar snap peas) and simmer for 20-30 minutes. Add asparagus and sugar snap peas during the last 6-8 minutes and cook together.

Cut tofu into pieces and heat in the soup. Season soup with salt and pepper to taste.
