Ingredients

  • 1 onion
  • 1 tbsp plant oil
  • 2 tbsp Tomato paste
  • 800 ml vegetable broth
  • 400 g sauerkraut
  • Salt
  • a pinch of sugar
  • 1 tsp apple cider vinegar
  • Cayenne pepper
  • kiwi slices (for garnish)

Instructions

    Peel, halve, and slice the onion into strips. Sauté in hot oil until translucent. Stir in tomato paste and deglaze with broth. Add well-drained sauerkraut, cover, and simmer gently for about 45 minutes.

    Season with salt, sugar, vinegar, and cayenne pepper. Serve on plates garnished with kiwi slices.
