Ingredients
- 1 sheet dried wakame seaweed
- 1 clove garlic
- 1 walnut-sized piece ginger
- 1 tbsp Sesame oil
- 600 ml dashi broth
- 2 tsp miso paste
- soy sauce to taste
- 200 g tofu (natural)
- 1 Spring onion
- spring onions for garnish
Instructions

Soak the wakame in cold water. Peel and finely chop the garlic and ginger. Heat the oil. Sauté the garlic and ginger until fragrant. Deglaze with dashi broth and 200 ml water. Add miso and 1-2 tbsp soy sauce. Bring the soup to a boil, then add the wakame.

Cut the tofu into cubes. Clean, wash, and finely chop the spring onion. Warm the tofu and spring onion in the soup for 5 minutes. Season the soup with soy sauce and ladle into bowls. Garnish with coriander.
