Ingredients
- 1 butternut squash
- 2 green bell peppers
- olive oil (cold pressed)
- Salt
- Pepper (freshly ground)
- rosemary
- 8 wooden skewers

Preheat the oven to 200°C.

Peel the squash, remove seeds and cut into bite‑size cubes. Wash the bell peppers, halve them, deseed and cut into rectangles. Alternate threading squash and pepper onto the wooden skewers. Brush with oil and season with salt, pepper, and rosemary. Place on an oiled baking sheet and roast for 20–30 minutes until golden brown. The squash should be tender.
