Sauerkraut Soup with Croûtons

A hearty sauerkraut soup featuring fresh ingredients and a delightful crunch from homemade croûtons, brought to you by Spoonsparrow.

Ingredients

  • 1 onion
  • 2 carrots
  • 2 tbsp margarine
  • 500 g fresh sauerkraut
  • 2 Bay leaves
  • 800 ml vegetable broth (ready-made)
  • 150 g crème fraîche
  • 1 splash white wine
  • Salt
  • ground pepper
  • 1 pinch sugar
  • 2 slices toast bread
  • 30 g Walnuts
  • 3 tbsp oil
  • 1 bunch chives
  • pink pepper

Instructions

    Cube the toast bread. Roughly chop the walnuts. Heat 2 tbsp oil and fry the bread cubes until golden brown. Heat the remaining oil and briefly roast the walnuts. Rinse the chives, pat dry, and roughly chop. Serve the soup topped with croûtons, walnuts, chives, and pink pepper.
