Ingredients

  • 8 slices whole grain toast (deveined)
  • 1 Carrot
  • 2 iceberg lettuce leaves
  • 3 tbsp chopped parsley
  • 150 g cream cheese
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp Lemon Juice

Instructions

    Peel and grate the carrot. Mix parsley with half of the cream cheese, seasoning with salt, pepper, and lemon juice.

    Spread the remaining cream cheese on all toast slices. Layer 2 slices with grated carrot, then top with a slice of cream‑cheese side. Repeat with lettuce leaves, followed by another cream‑cheese side. Spread herb cream cheese thickly on two double slices and place the other double slices on top.
