Fried Noodle Pancakes

Ingredients

  • 400 g spaghetti
  • Salt
  • 3 spring onions
  • 40 g parmesan (1 piece)
  • 3 eggs
  • Pepper
  • 3 tbsp olive oil

Instructions

    Cook noodles in boiling salted water according to package instructions until al dente.

    Meanwhile wash, trim and slice spring onions into fine rings. Grate parmesan and mix with eggs and spring onions.

    Drain spaghetti well and add to the egg mixture; season with salt and pepper.

  4. 4.

    Heat oil in a pan. Using a fork, shape noodles into nests, place them in the pan and fry on both sides for about 5 minutes until golden brown at medium heat.
