Ingredients

  • 300 g celery root
  • 150 g waxy potatoes
  • 2 onions
  • 3 tbsp oil
  • juice and zest of 1 untreated orange
  • 1 l vegetable broth
  • salt, pepper
  • 1 hazelnut-sized piece ginger
  • 200 g raw shrimp (peeled)
  • 2 Spring Onions

Instructions

    Peel and rinse celery root and potatoes, then roughly chop. Peel and dice onions. Heat 2 tbsp oil in a tall pot. Sauté onions, celery, potatoes, and half the orange zest briefly. Add broth, cover, and simmer for about 30-35 minutes.

    Puree everything with a hand blender and add orange juice. Season with salt and pepper, then stir in remaining orange zest. Keep soup warm.

    Peel ginger and finely dice. Heat remaining oil. Cook shrimp and ginger for about 2-3 minutes. Trim spring onions, rinse, and cut into thin strips lengthwise. Serve the soup topped with shrimp and spring onion strips.
