Vegetable Salad with Watercress

Ingredients
- 2 small zucchini
- 4 stalks of celery
- 2 bell peppers (yellow and orange)
- 100 g radishes
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- 1 tsp Honey
- Salt
- Pepper
- chili flakes
- A handful of watercress
- 3 stems of thyme
- 4 tbsp olive oil
Instructions

Wash, trim the zucchini, celery, bell peppers, and radishes; cut the bell peppers into pieces and slice the rest.

Whisk together vinegar, lemon juice, and honey. Season with salt, pepper, and chili flakes, then toss with the vegetables. Cover and refrigerate for about 30 minutes to marinate.

Rinse the watercress and thyme, pat dry, and shake off excess moisture. Toss with olive oil, season to taste, and serve in mason jars if desired.
