Ingredients

  • 100 g anchovy (in oil)
  • 1 small cucumber
  • 3 pickled cucumbers
  • 1 blue onion
  • 70 ml pickle brine
  • 2 tbsp white balsamic vinegar
  • 0.5 bunch Chives
  • Salt
  • Pepper

Instructions

    Drain the anchovies and cut them into small pieces. Peel the cucumber, halve it lengthwise, deseed, and dice. Drain the pickles and dice them finely. Peel the onion and dice it finely. Combine everything in a bowl with the pickle brine and white balsamic vinegar, season with salt and pepper, and let rest for 30 minutes. Wash the chives, shake dry, set aside a few stems for garnish, and slice the remainder into fine ribbons. Just before serving, fold the ribbons into the salad and fill glasses. Serve garnished with chives.
