Ingredients
- 250 g fine bulgur
- 2 bell peppers (green and yellow)
- 2 Tomatoes
- 2 Spring Onions
- 1 handful fresh parsley
- 3 tbsp tomato paste
- 1 tbsp ajvar
- 4 tbsp olive oil
- 1 tsp Sambal oelek
- garlic powder
- paprika powder
- 1 tsp lemon juice
- Salt
- black pepper (freshly ground)
Instructions

Place the bulgur in a bowl, cover with lukewarm water and let it soak for about 20 minutes.

Wash, trim, seed and dice the bell peppers. Wash, core and dice the tomatoes. Trim and slice the spring onions into thin rings. Rinse the parsley, shake off excess water and finely chop the leaves. In a separate bowl whisk together the tomato paste, ajvar, olive oil, sambal oelek, a pinch of garlic powder, paprika powder and lemon juice. Mix this dressing with the cooked bulgur. Fold in the spring onions, bell peppers, tomatoes and parsley, then let the salad rest for at least one hour to meld flavors. Season with salt and pepper to taste.
