Vegetable Salad with Pancake‑Like Crêpes

Ingredients

  • 0.25 head lettuce (e.g., romaine)
  • 1 large onion
  • 1 bunch radishes
  • 1 small can corn
  • 2 red bell pepper halves
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • Herb salt
  • Pepper
  • 6 tbsp spelt flour
  • 2 tbsp Sour cream
  • 2 Eggs

Instructions

    Mix spelt flour, eggs, sour cream and 4 tbsp water to form a batter; let it rest.

    Wash the lettuce, dry and tear into bite‑sized pieces. Divide between two bowls.

    Peel and finely dice the onion; wash, trim, halve, seed, peel, and slice the bell pepper into thin strips. Slice the radishes and grate the corn. Combine all in a bowl, add 2 tbsp oil, lemon juice, herb salt, and pepper; season to taste and spoon over the lettuce.

    Pour batter onto a hot pan with remaining oil, cook each side until golden, fold the crêpes, and serve atop the salad.
