Ingredients
- 250 g young leaf spinach
- 150 g stone mushrooms
- 1 Shallot
- 1 small carrot
- 4 tbsp apple cider vinegar
- 1 tsp Honey
- 6 tbsp sunflower oil
- Salt
- Pepper
- garden cress (for garnish)
Instructions

Rinse the spinach, pat dry. Clean the mushrooms and slice thinly. Peel and finely chop the shallot. Peel and grate the carrot finely. Whisk together the shallot, vinegar, honey, and oil; season with salt and pepper.

Arrange the spinach and mushrooms on plates and drizzle the dressing over them.

Serve garnished with a sprinkle of garden cress.
