Ingredients

  • 1 kg cooked potatoes (peeled)
  • 1 kg cooked beetroot (peeled)
  • 1 onion
  • 1 pickled cucumber
  • 2 Apples
  • 4 Tbsp mayonnaise
  • juice of 1 lemon
  • 1 tbsp White Wine Vinegar
  • Salt
  • black pepper (freshly ground)
  • 1 pack Swedish rolls (Skorpa)
  • springs onions
  • black olives

Instructions

  1. 1.

    Cut potatoes, beetroot, peeled onion, apples and cucumber into very fine pieces and mix with mayonnaise, lemon juice, vinegar, salt and pepper; taste.

    Place the springform pan rim on a plate. Take some of the beetroot-potato mixture and put it in the rim of the springform pan.

    Arrange the Skorpa rolls with their domed side next to the rim and fill them with the remaining mixture.

  4. 4.

    To garnish remove the springform rim, wrap the Charlotte with a ribbon and decorate with olives and springs onions.
