Pasta Salad with Arugula and Blue Cheese

Ingredients

  • 300 g macaroni
  • Salt
  • 160 g arugula (2 bunches)
  • 100 g blue cheese
  • 50 g walnut kernels
  • 4 tbsp apple cider vinegar
  • 5 tbsp olive oil
  • Pepper

Instructions

    Cook the pasta in boiling salted water according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    While the pasta cooks, wash, trim, dry, and tear the arugula into bite‑sized pieces as needed.

    Slice the blue cheese into rounds and then cut into larger chunks.

  4. 4.

    Blend half of the walnuts with some reserved pasta water, vinegar, and olive oil in a blender. Season with salt and pepper to taste.

    Fold the arugula and pasta into the walnut sauce, adjust seasoning, and serve on plates. Distribute the blue cheese over the salad and sprinkle the remaining walnuts on top.
